History of Augustin’s Waffles
The Peiffer Family has a long history of running a traditional artisanal bakery for many generations in our native village of Membach. My father, Gaston Peiffer, began the family business in 1938 at the age of 17. Under his leadership and guidance, the bakery began to meet all the needs of our village and of the neighboring villages.
In 1950 the family bakery was approached by the Belgian Army which had various units stationed nearby in Germany. The military and their families, feeling far from the Mother Country , wanted to be able to eat bread from a Belgian bakery. To satisfy this clientele, my father expanded daily production of the bakery.
In 1962 he organized a tasting of true and original waffles from Liege, secretly prepared in the workshops of Membach for the first time. Thanks to a very strict tradition of preparation of the Liege Waffle, success followed.
Over time a germ of an idea began to grow in my spirit. Amid this image of Belgian chocolates and Belgian beers beloved by foreigners, the concept of Augustin’s Waffles was born.
In 2002 I completed the work for a project that would allow me to build and sell Liege waffles. It offered me the possibility of sharing the joy of enjoying an original and true Liege waffle with the world.
The concept has been well received in the Northern and Southern hemisphere. And I feel a certain pride in knowing that a product from Wallonia is regularly eaten at all times of the day and night in the world.
This small deed is due to my father, Gaston Peiffer: “Thank you Dad for having shared the “bug” of creating the Liege waffle. I will always appreciate the love and help you have given.”
